Chopped Chinese Pasta Salad

Ingredients:
2 Cloves Garlic
1/2 Onion
1/2 Head Red Cabbage
1/2 Head Green Cabbage
1 Cup Chopped Kale
2 Celery stalks
1 Green Pepper
1 Small Head of Cauliflower
1 Small Head of Broccoli
1/2 Cup Fresh Cilantro (to taste)
2 Tbsp Sesame Seeds
1/4 Cup Slivered/Sliced Almonds
Red Pepper to taste

Sauce ( I eyeballed these one at a time and poured them onto the chopped veggies)
Rice Vinegar
A Small Amount of Peanut Sauce
Liquid Aminos (or soy sauce)
Sesame Oil
Salt/Pepper

Directions:
Chop all the vegetables and mix them together. Pour the sauce ingredients over the vegetables and allow the vegetables to marinade in the sauce for at least 30 mins to an hour. Mix with your choice of pasta, I used multicolored spiral pasta. Serve over a bed of lettuce. I drizzled some balsamic vinegar over mine before I ate it but that is just personal preference.

Enjoy!
